  • (1 1/2 cups) Parmesan cheese
  • Salt, pepper, nutmeg

Eggs Florentine

This egg and spinach dish is perfect for a low-carb diet.

    Instructions

  1. 1Preheat a large skillet over medium high heat. Add the spinach and 2 Tbsp. of water, cover and cook until thawed.
  2. 2Season with a pinch of salt, pepper and nutmeg.
  3. 3Crack eggs on top of spinach, one next to the other. Cover, cook for 2-3 minutes or longer, according to your preference.
  4. 4Sprinkle cheese on top, cover and cook for another minute, serve.
