Orange Berry Muffins w/Almond Streusel

Ingredients:
  • (3 Tbsp.) almonds
  • (2 Tbsp.) plus 3/4 cup all-purpose flour, divided
  • (2 Tbsp.) plus 1/2 cup brown sugar, divided
  • (3 tsp.) freshly grated orange zest, divided
  • (1/2 tsp.) salt, divided
  • (2 Tbsp. plus 1/4 cup) canola oil, divided
  • (1 cup) white whole-wheat flour or whole-wheat pastry flour
  • (2 tsp.) baking powder
  • (1 tsp.) baking soda
  • (3/4 cup) nonfat or low-fat buttermilk
  • (1/4 cup) orange juice
  • (1 large) egg
  • (1 tsp.) vanilla extract
  • (1 1/2 cups) fresh or frozen unthawed strawberries, chopped

Orange Berry Muffins w/Almond Streusel

    Instructions

  1. 1Preheat oven to 400°F. Spray a standard muffin pan with cooking spray.
  2. 2Place almonds, 2 Tbsp. all-purpose flour, 2 Tbsp. brown sugar, 1 tsp. orange zest and 1/4 tsp. salt in a food processor. Process until fine, place in a small bowl and stir in 2 tsp. oil; set aside.

  3. 3In a large bowl, whisk together 3/4 cup all-purpose flour, whole-wheat flour, baking powder, baking soda and the remaining 1/4 tsp. salt. Use your hand to form a hole in the center of the mixture.

  4. 4In a medium bowl, whisk together 1/2 cup brown sugar, 2 tsp. orange zest, 1/4 cup oil, buttermilk, orange juice, egg and vanilla. Pour into the hole you created and stir until combined. Fold in strawberries.

  5. 5Fill each muffin cup 3/4 full and top with almond mixture. Bake 18-20 minutes, or until a toothpick comes out clean. Cool on a wire rack and serve.
