Ingredients:
  • (1/2 cup) seedless cucumber, finely chopped
  • (7 oz. bottle) roasted red bell peppers, drained and finely chopped
  • (3/4 cup) "1/3-less-fat" cream cheese, softened
  • (1/3 cup) block-style fat-free cream cheese, softened
  • (3 Tbsp.) red onion, minced
  • (1/4 tsp.) salt
  • (1 clove) garlic, minced
  • (8 slices) whole-grain bread
  • (8) romaine lettuce leaves

Vegetable Cream Cheese Sandwiches

Cucumber and red peppers mixed with soft cream cheese and served on whole-grain bread with lettuce.

    Instructions

  1. 1Drain excess moisture from cucumber and bell peppers by placing them on heavy-duty paper towels. Set aside for 5 minutes.
  2. 2In a medium bowl, use a fork to stir together vegetables, cheeses, onion, salt and garlic.
  3. 3Top 4 bread slices with 1/2 cup vegetable mixture, 2 lettuce leaves and remaining bread slices. Cut in half and enjoy!
