Grilled Shrimp and Pineapple Salad

Ingredients:
  • (3) limes
  • (3 Tbsp.) olive oil
  • (1 1/2 cups) loosely packed fresh basil leaves
  • (1/2 tsp.) salt
  • (1/4 tsp.) coarsely ground black pepper
  • (1 1/2 lb.) large shrimp, shelled and deveined
  • (1) pineapple, cut into 8 wedges
  • (12) corn tortillas
  • (5 to 6 oz. bag) baby greens
  • (2 medium heads) Belgian endive, sliced

Grilled Shrimp and Pineapple Salad

Grilled shrimp and pineapple chunks tossed with baby greens and served with grilled tortillas.

    Instructions

  1. 1Preheat outdoor grill to medium heat.
  2. 2In a blender, combine 1/2 tsp. lime peel, 1/4 cup lime juice, 1/2 cup basil, salt and pepper. Puree until smooth.
  3. 3In a medium bowl, toss shrimp with 2 Tbsp. dressing, set aside.
  4. 4Grill pineapple 10 minutes, turning once. Grill shrimp in a grill basket 5-8 minutes, turning once. When cool enough to handle, chop pineapple into 1/2 in. cubes.

  5. 5Spray both sides of tortillas with cooking spray and grill 2-3 minutes on each side.
  6. 6In a large bowl, toss together shrimp, greens, endive, pineapple chunks, rest of basil and dressing. Serve each serving of salad on top of 2 tortillas. Enjoy!
