Fruit Cake Bars

Ingredients:
  • (2 1/2 cups) all-purpose flour
  • (3/4 tsp.) baking soda
  • (1/4 tsp.) salt
  • (1 tsp.) ground cinnamon
  • (1 cup) butter, softened
  • (1 1/2 cups) packed dark brown sugar
  • (2 large) eggs
  • (1 tsp.) vanilla extract
  • (1 cup) walnuts, chopped
  • (1 cup) pitted dried dates, chopped
  • (1 cup) dried tart cherries
  • (1/2 cup) dried apricot halves, chopped
  • (1/2 cup) golden raisins
  • Confectioners' sugar for dusting, optional

Fruit Cake Bars

Thick cookie bars loaded with chopped walnuts and four kinds of dried fruit.

    Instructions

  1. 1In a small bowl, mix together flour, baking soda, salt and cinnamon, set aside.
  2. 2In a large bowl, use an electric mixer on medium to beat together butter and brown sugar. Beat in eggs and vanilla. Continue to beat on low while adding flour mixture, beat until combined.

  3. 3Stir in walnuts, dates, cherries, apricots and raisins.
  4. 4Preheat oven to 350°F. Place a sheet of foil on a standard jelly roll pan, leaving 2 inches excess on both sides. Spray with cooking spray.
  5. 5Transfer dough to prepared pan and press into an even layer (flour fingers if necessary). Bake 25-28 minutes, until a toothpick comes out clean. Place pan on a wire rack to cool.

  6. 6Cut into 48 bars and serve.
