Granola Crusted Pear Cheesecake

Ingredients:
  • (6) dried pear halves, chopped
  • (1/3 cup) crystallized ginger
  • (1/2 cup) water
  • (1 cup) low-fat granola
  • (16 oz.) nonfat or low-fat cottage cheese
  • (16 oz.) nonfat cream cheese
  • (1/2 cup) granulated sugar
  • (1/4 cup) packed light brown sugar
  • (3) large eggs
  • (1/3 cup) all-purpose flour
  • (2 tsp.) vanilla extract

Granola Crusted Pear Cheesecake

A smooth pear cheesecake filling over a crunchy granola crust.

    Instructions

  1. 1Preheat oven to 325°F. Spray a 9 in. springform pan with cooking spray.
  2. 2Place a medium saucepan over medium heat. Add pears, ginger and water. Simmer, then reduce heat, cover and cook 10-14 minutes, until softened.

  3. 3Place granola in a food processor, process until fine. Press into bottom and sides of pan to make a crust. Place pear mixture into food processor and process until coarse. Let cool 10 minutes.

  4. 4Add cottage cheese and cream cheese to food processor with pears, process until smooth. Add sugars and process again. Keep processor running and add eggs, beating well after each addition.

  5. 5Add flour and vanilla, process until combined. Pour over crust, tap pan on counter several times. Bake 50 minutes, until set. Keep cheesecake in oven for another hour with oven off and door slightly open.

  6. 6Cool another hour, cover and refrigerate at least 4 hours. Serve and enjoy!
