Ingredients:
  • (1 1/2 Tbsp.) unflavored gelatin
  • (1 cup) whole milk
  • (3/4 cup plus 2 Tbsp.) sugar, divided
  • (3 cups) low-fat buttermilk
  • (1 tsp.) grated lemon rind
  • (1/2 cup) apple juice
  • (1 Tbsp.) fresh lemon juice
  • (2 cups) blueberries
  • Mint sprigs (optional)

Individual Lemon Blueberry Custards

Thick lemon custards served with a warm blueberry sauce.

    Instructions

  1. 1Spray 8 custard dishes with cooking spray.
  2. 2Place milk into a small saucepan, sprinkle gelatin on top and set aside 10 minutes.
  3. 3Place pan over medium-low heat and whisk for 10 minutes to dissolve the gelatin. Raise heat to medium and continue whisking while you add 1/2 cup and 2 Tbsp. sugar.

  4. 4Take off the heat, then stir in buttermilk and lemon rind. Pour evenly into greased dishes, cover and refrigerate at least 5 hours, up to overnight.

  5. 5Place a small saucepan over medium heat. Add apple juice, 1/4 cup sugar and lemon juice. Bring to a boil, stirring occasionally, then lower heat to medium and add blueberries.

  6. 6Cook 8 minutes, then take off the heat and cool completely. Flip each custard upside down onto a serving plate and top with blueberry sauce and mint.
