Tropical Papaya Sorbet

Ingredients:
  • (8 cups) ripe papaya, peeled, seeded and diced
  • (1/2 cup) water
  • (1/2 cup) sugar
  • (1/4 cup) “lite” coconut milk, divided
  • (2 Tbsp.) lime juice, divided
  • (1 tsp.) lime zest, divided
  • Salt

Tropical Papaya Sorbet

A refreshing citrus papaya sorbet made with coconut milk.

About 30 minutes (plus overnight freezing)
Cook Time
About 10 minutes

    Instructions

  1. 1Place a sheet of parchment paper on a large baking sheet. Place papaya on baking sheet in a single layer and put in freezer overnight.
  2. 2Place a small saucepan over High heat. Add water and sugar, stir until boiling. Pour into a glass bowl and set aside 15 minutes. At this time, take papaya out of the freezer to defrost for 15 minutes.

  3. 3In a food processor, add half of papaya, half of syrup, 2 Tbsp. coconut milk, 1 Tbsp. lime juice, 1/2 tsp. lime zest and a pinch of salt. Puree until smooth, pour into a large bowl.

  4. 4Repeat with other half of ingredients and serve.
