Instructions
1Preheat oven to 350°F. Spray an 8x8 in. metal baking pan with cooking spray.
2In a small cup, combine coffee powder and vanilla extract, stir until dissolved.
3In a medium bowl, stir together flour, cocoa, baking powder and salt. In a separate bowl, whisk together sugar, vegetable oil spread, egg whites and vanilla. Add dry ingredients, stir to combine.
4Pour into greased pan and bake 22-24 minutes, or until toothpick comes out clean. Cool on a wire rack and serve.
