Fruity Asian Chicken Bowties
Ingredients:
- (8 oz. package) bow tie (farfalle) pasta
- (1 tsp.) fresh ginger, peeled and finely chopped
- (1/3 cup) rice vinegar
- (1/4 cup) orange juice
- (1/4 cup) vegetable oil
- (1 tsp.) toasted sesame oil
- (1 oz. package) dry onion soup mix
- (2 tsp.) white sugar
- (1 clove) garlic, pressed
- (1/2) cucumber, scored, halved lengthwise, seeded
and sliced
- (1/2 cup) red bell pepper, diced
- (1/2 cup) red onion, coarsely chopped
- (2) Roma tomatoes, diced
- (1) carrot, shredded
- (6 oz. bag) fresh spinach
- (11 oz. can) mandarin orange segments, drained
- (2 cups) cooked chicken, diced
- (1/2 cup) sliced almonds, toasted

Instructions
- 1Fill a large pot with 2 quarts cold water and place over High heat. When boiling, add pasta and cook 8-10 minutes. Drain, place under cold running water until cooled, drain
again.
- 2Meanwhile, in a large bowl, whisk together ginger, rice vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar and garlic. Refrigerate until pasta is ready.
- 3Toss cucumber, bell pepper, onion, tomatoes, carrot, spinach, mandarin oranges, chicken, almonds and cooled pasta with dressing. Serve and enjoy!
