Peanut Chicken Salad

Ingredients:
  • (1/4 cup) fat-free, less-sodium chicken broth
  • (2 Tbsp.) rice wine vinegar
  • (1 Tbsp.) Thai fish sauce
  • (1 Tbsp.) low-sodium soy sauce
  • (1 Tbsp.) bottled chopped garlic
  • (2 tsp.) sugar
  • (1 lb.) skinless, boneless chicken breast tenders
  • (1 Tbsp.) peanut oil
  • (4 cups) mixed salad greens
  • (1/4 cup) fresh basil, chopped
  • (1/2 cup) red onion, thinly sliced
  • (2 Tbsp.) unsalted, dry-roasted peanuts, finely chopped
  • Lime wedges, optional

Peanut Chicken Salad

An Asian inspired salad with marinated chicken, mixed greens and dry-roasted peanuts.

    Instructions

  1. 1In a medium bowl, combine chicken broth, rice wine vinegar, fish sauce, soy sauce, garlic and sugar. Add chicken, set aside 3 minutes.
  2. 2Place a large nonstick skillet over medium-high heat. Add oil. Drain chicken, saving marinade. Cook chicken 4 minutes, turning often. Add marinade, cook another minute on medium. Set aside off heat.

  3. 3In a large bowl, toss together greens, basil and chicken. Serve with red onion, peanuts and lime wedges.
