Ingredients:
  • (1) yellow summer squash, sliced
  • (1 medium) zucchini, sliced
  • (1 small) red onion, sliced
  • (1 small) eggplant, cubed
  • (1 small) sweet red pepper, cut into 1 in. slices
  • (2 tsp.) olive oil
  • (2 tsp.) balsamic vinegar
  • (2 tsp.) soy sauce
  • (1/2 tsp.) dried oregano
  • (1/4 tsp.) dried rosemary, crushed
  • (1/3 cup) sour cream
  • (1/3 cup) mayonnaise
  • (1/4 cup) 2% milk
  • (4 tsp.) ranch salad dressing mix
  • (1/2 tsp.) garlic salt
  • (1/4 tsp.) pepper
  • (6 cups) spring mix salad greens

Ranch Garden Salad

A medley of garden vegetables are grilled and served over mixed greens with a creamy Ranch dressing.

    Instructions

  1. 1Preheat grill to medium heat.
  2. 2In a large bowl, toss squash, zucchini, red onion, eggplant and red peppers with oil, vinegar, soy sauce, oregano and rosemary. Place in a grill basket or a disposable foil pan w/holes in the bottom.

  3. 3Cover and grill 10-12 minutes, stirring halfway through.
  4. 4Meanwhile, combine sour cream, mayonnaise, milk, dressing mix, garlic salt and pepper. Serve 1 cup vegetables over 1 cup mixed greens with 8 tsp. dressing.
