Roasted Red Onion and Tomato Salad
Thick red onions, Roma tomatoes and Italian bread are grilled then combined with cucumber and a simple oil and vinegar dressing.

Instructions
1Preheat outdoor grill or indoor grill pan to medium-high heat.
2Place 2 Tbsp. olive oil in a small bowl and use a pastry brush to brush both sides of the onion and tomatoes with it. Grill 5 minutes, or until soft.
3Place the bread in a large bowl, add 2 Tbsp. oil, thyme, salt and pepper to taste, toss to combine. Place on metal skewers and grill about 3 minutes, turning occasionally.
4In a small bowl, whisk together remaining 2 Tbsp. olive oil and vinegar.
5Remove onions and tomatoes from grill, chop into large pieces and combine with bread, cucumber and basil in a large bowl. Add dressing, toss to combine and serve.
