Ingredients:
  • (3 cups) honeydew melon, cut into 1/2 in. cubes
  • (3 cups) cantaloupe, cut into 1/2 in. cubes
  • (2 Tbsp.) fresh mint, thinly sliced
  • (1 tsp.) fresh lemon juice
  • (1/4 tsp.) freshly ground black pepper
  • (2 oz.) thinly sliced prosciutto, cut into thin strips
  • (1/2 cup) fresh Parmigiano-Reggiano cheese, shaved
  • Cracked black pepper, optional
  • Mint sprigs, optional

Italian Melon Salad

Honeydew melon and cantaloupe tossed with lemon juice and black pepper then served with prosciutto and Parmesan cheese on top.

    Instructions

  1. 1In a large bowl, toss together melon, cantaloupe, mint, lemon juice and ground black pepper. Place on a serving platter.
  2. 2Top with prosciutto, cheese, cracked pepper and mint. Serve and enjoy.
