Flourless Chocolate-Pistachio Lava Cakes

Ingredients:
  • (1 cup) shelled dry-roasted pistachios
  • (1 3/4 cups) sugar, divided
  • (1/4 cup) unsweetened cocoa
  • (2 large) whole eggs
  • (5 large) egg whites
  • (2 oz.) bittersweet chocolate, coarsely chopped
  • (1/2 tsp.) baking powder
  • (1/2 tsp.) vanilla extract
  • (1 cup) 2% reduced-fat milk
  • Salt
  • Powdered sugar

Flourless Chocolate-Pistachio Lava Cakes

Mini chocolate lava cakes served with a thick pistachio sauce and powdered sugar.

    Instructions

  1. 1In a food processor, process pistachios for 3-4 minutes or until they form into a paste. Place a large glass bowl on top of a pot of boiling water (double boiler).

  2. 2Add 1/4 cup pistachio mixture, 1 1/2 cups sugar, cocoa, eggs and egg whites to bowl, whisk together. Add chocolate, cook until melted, stirring frequently. Remove from heat.

  3. 3Stir in baking powder and vanilla. Spray a muffin pan with cooking spray, fill each muffin cup with batter, refrigerate for 2 hours.
  4. 4Meanwhile, add 1/2 cup sugar to remaining pistachio mixture in food processor, pulse until combined. Add milk and salt, process until combined.

  5. 5Place a small saucepan on cold stove. Strain mixture into pan, turn to high heat and bring to a boil. Once boiling, reduce heat and simmer until thick, about 4 minutes.

  6. 6Transfer to a bowl, cover and refrigerate.
  7. 7Preheat oven to 450°F. Remove muffin pan from fridge, bake 9 minutes or until almost set. Cool 5 minutes in pan. Flip each cake out of pan so the top of the cake becomes the bottom.

  8. 8Add a spoonful of pistachio sauce and a dusting of powdered sugar over the top and serve..
