Glazed Almond Cookies

Ingredients:
  • (1/2 cup + 2 Tbsp.) "8 grams fat per Tablespoon" margarine
  • (1/4 cup) almond paste
  • (2 Tbsp.) fat free half and half
  • (1/2 cup + 2 Tbsp.) granulated sugar
  • (2 1/4 tsp.) almond extract, divided
  • (1 cup) whole wheat flour
  • (1 cup) unbleached white flour
  • (1/2 tsp.) baking powder
  • (1/4 tsp.) salt
  • (2/3 cup) powdered sugar
  • (2 tsp.) water
  • (2/3 cup) sliced almonds, toasted

Glazed Almond Cookies

Almond butter cookies topped with an almond sugar glaze and more sliced, toasted almonds.

    Instructions

  1. 1Preheat oven to 350°F. Place parchment paper on 2 baking sheets.
  2. 2Whisk together wheat and white flours, baking powder and salt in a medium bowl; set aside.
  3. 3Rub almond paste between your fingers to break it up into a large bowl. Add margarine, use an electric mixer to cream together. Add half and half, sugar and 1 1/4 tsp. almond extract, beat until combined.

  4. 4Gradually add flour mixture to to butter mixture, beating well after each addition. Drop by rounded teaspoonfuls onto prepared baking sheets.
  5. 5Place 1/4 cup sugar into a small bowl. Spray the bottom of a drinking glass with cooking spray, dip in sugar and flatten each cookie. When sugar runs out, re-spray and re-dip into sugar.

  6. 6Bake 8-10 minutes, or until lightly browned. Meanwhile, whisk together powdered sugar, almond extract and 1-2 tsp. water in a small bowl. When cookies are cool, top with glaze and sliced almonds.
