Ingredients:
  • (1/4 cup) apple juice
  • (3) granny smith or other baking apples, peeled and thickly sliced
  • (1 1/4 cups) whole wheat flour
  • (1/3 cup) packed turbinado or light brown sugar
  • (1 tsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1 tsp.) ginger
  • (1/2 tsp.) cinnamon
  • (1/2 tsp.) salt
  • (1 large) egg
  • (2 large) egg whites
  • (1/2 cup) buttermilk
  • (2 Tbsp.) extra-light olive oil

Apple Upside Down Cake

Warm apples become the top layer of this spiced breakfast cake when inverted.

    Instructions

  1. 1Preheat the oven to 350°F. Spray an 8 in. round baking pan with cooking spray.
  2. 2Place a large skillet over medium heat. Add apple juice. When hot, add apples and cook 5 minutes, stirring once or twice. Use a slotted spoon to transfer apples to baking dish.

  3. 3In a small bowl, whisk together egg, egg whites, buttermilk and olive oil, set aside.
  4. 4Combine flour, brown sugar, baking powder, baking soda, ginger, cinnamon and salt in a medium bowl. Use your hand to make a hole in the center of the mixture, pour eggs into the hole and stir to combine.

  5. 5Spread apples into an even layer, top with batter. Bake 30 minutes, or until a toothpick comes out clean. Cool 10 minutes, invert and serve.
