Vegetable and Cheese Frittata

Ingredients:
  • (1 cup) asparagus, cut into bite size pieces
  • (4 tsp.) extra-virgin olive oil
  • (1/2 cup) chopped onion
  • (1/2 cup) grape tomatoes, or cherry tomatoes, halved
  • (1/4 cup) slivered fresh mint
  • (1/4 cup) slivered fresh basil
  • (1/4 tsp.) salt
  • Freshly ground pepper
  • (5 large) eggs
  • (1/4 cup) crumbled feta cheese

Vegetable and Cheese Frittata

A classic Italian egg dish made with asparagus and feta cheese.

    Instructions

  1. 1Place a large non-stick skillet over medium heat. Add 2 tsp. oil.
  2. 2When hot, add onion and asparagus and cook for 1 minute. Cover, reduce heat and cook for 3-5 minutes, stirring occasionally.
  3. 3Add tomato, mint, basil, 1/8 tsp. salt and pepper to taste. Bring heat back up and cook another minute, stirring.
  4. 4Preheat the broiler for later.
  5. 5In a large bowl, beat eggs, remaining salt and a pinch of pepper. Stir in the cheese and vegetable mixture.
  6. 6Use a paper towel to wipe your pan and place it back over medium-low heat. Add 2 tsp. oil and the egg mixture. Let cook for 3-4 minutes, occasionally lifting the edges to spread the mixture.

  7. 7Move the pan under the broiler for about 2 minutes or until golden brown. Enjoy!
