Veggie Scramble w/Tortillas

Ingredients:
  • (2 tsp.) olive oil
  • (1/2) orange bell pepper, ribbed, seeded and diced
  • (1) scallion, thinly sliced
  • (1/2 cup) frozen corn kernels
  • (1/4 tsp.) ground cumin
  • Coarse salt
  • Ground pepper
  • (2 large) eggs
  • (2 large) egg whites
  • (1/4 cup) shredded white cheddar cheese
  • (1/4 cup) fresh prepared salsa
  • (1/2) avocado, pitted and diced
  • (2) whole-wheat flour tortillas (6-in. diameter), warmed

Veggie Scramble w/Tortillas

Cheesy eggs scrambled with scallions and fresh corn served with salsa, avocado and warm flour tortillas.

    Instructions

  1. 1Place a medium nonstick skillet over medium heat. Add 1 tsp. oil. When hot, add bell pepper and cook 5-7 minutes.
  2. 2Stir in scallion, corn and cumin, cook another 2-3 minutes. Add salt and pepper, set aside with a foil tent.
  3. 3Wipe out skillet, place back over medium heat. Add 1 tsp. oil.
  4. 4Whisk together eggs, egg whites, 1/2 tsp. salt, 1/8 tsp. pepper and 2 tsp. water in a large bowl. Cook about 30 seconds, stir and cook another 2 minutes, stirring occasionally.

  5. 5Add cheese and vegetables, stir to combine. Enjoy with salsa, avocado and warm tortillas.
