Pepperoni and Mushroom Skillet Frittata

Ingredients:
  • (3 Tbsp.) olive oil
  • (2 medium) green peppers, chopped
  • (8 oz.) mushrooms, sliced
  • (4 oz.) pre-sliced pepperoni
  • (2 tsp.) oregano
  • (4 cloves) garlic
  • Salt and pepper
  • (12) eggs
  • (2 Tbsp.) water
  • (8 oz.) shredded mozzarella cheese (1 cup) sugar-free pasta sauce

Pepperoni and Mushroom Skillet Frittata

An Italian-inspired pepperoni and mushroom frittata with green peppers, pasta sauce and mozzarella cheese.

    Instructions

  1. 1Place a large, nonstick, oven-safe skillet over medium-high heat. Add oil. When hot, add green peppers, mushrooms and pepperoni. Saute 5 minutes.

  2. 2Stir in garlic, cook 1 minute. Stir in oregano, salt and pepper to taste.
  3. 3Preheat the broiler.
  4. 4In a medium bowl, whisk together eggs, water, salt and pepper to taste. Pour into skillet, cook 2-3 minutes, stirring occasionally. Pour pasta sauce and cheese over the top.

  5. 5Transfer to oven, broil until top is browned and eggs are cooked through. If eggs need more time, cook at 300°F for 2-3 minutes, or until cooked. Cut and serve.
