Cranberry Pecan Waffles

Ingredients:
  • (1 1/4 cups) all-purpose flour
  • (1/4 cup) whole wheat flour
  • (4 1/2 tsp. plus 1/4 cup) sugar, divided
  • (4 tsp.) baking powder
  • (1/2 tsp.) salt
  • (1/4 tsp.) baking soda
  • (1) egg
  • (1) egg white
  • (1 cup) fat-free evaporated milk
  • (1 cup) orange juice, divided
  • (2 Tbsp.) canola oil
  • (1 tsp.) grated orange peel
  • (1/3 cup) dried cranberries
  • (3 Tbsp.) pecans, chopped
  • (1 cup) fresh or frozen cranberries
  • (2 Tbsp.) water
  • (2 Tbsp.) maple syrup

Cranberry Pecan Waffles

Cranberry-orange waffles with pecans and a maple cranberry syrup.

    Instructions

  1. 1Preheat waffle iron. Combine flours, sugar, baking powder, salt and baking soda in a large bowl.
  2. 2In a separate bowl, whisk together egg, egg white, milk, orange juice, oil and orange peel. Add to dry ingredients, stir to combine. Add dried cranberries and pecans.

  3. 3Pour 1/4 cup at a time onto preheated waffle iron and cook according to manufacturers instructions.
  4. 4Meanwhile, place a small saucepan over High heat. Add cranberries, sugar and orange juice. Bring to a boil, then simmer over medium heat 5 minutes. Take off heat to cool.

  5. 5Use a slotted spoon to set aside 1/2 cup cranberries. Process water, syrup and rest of cranberries in a blender until smooth. Combine with reserved cranberries in a serving dish. Enjoy!
