Ingredients:
  • (1 cup) diced onion
  • (1/4 cup plus 1 Tbsp.) water, divided
  • (1 tsp.) extra-virgin olive oil
  • (1/2 cup) liquid egg substitute
  • (2 tsp.) fresh herbs, chopped (or 1/2 tsp. dried)
  • (1/8 tsp.) salt
  • (1/8 tsp.) freshly ground pepper
  • (2 Tbsp.) farmer's cheese or reduced-fat ricotta

Skillet Herb Frittata

A one-skillet meal that is easy to make with liquid egg substitute, fresh chopped herbs and farmer's cheese.

    Instructions

  1. 1Place a small nonstick skillet over medium-high heat. Add onion and 1/4 cup water. Bring to a boil, then cover and cook about 2 minutes.
  2. 2Remove lid and cook another 1-2 minutes. Stir in oil, cook another 1-2 minutes.
  3. 3Reduce heat to medium-low and add egg substitute. Stir for 20-30 seconds, then tilt pan to spread uncooked egg around pan and cook another 30 seconds.

  4. 4Reduce heat to low, add herbs, salt, pepper and cheese on top. Use a spatula to lift one side of the frittata and spoon 1 Tbsp. water underneath it. Cover and cook 2 minutes, serve.
