Turkey and Swiss Quiche

Ingredients:
  • (3/4 cup) shredded Swiss cheese, divided
  • (3/4 cup) smoked turkey ham, cubed
  • (1/2 cup) onion, chopped
  • (1/8 tsp.) freshly ground black pepper
  • (1 cup) fresh baby spinach leaves
  • (1 cup) fat-free cottage cheese
  • (1/2 cup) evaporated fat-free milk
  • (1/4 cup) shredded reduced-fat cheddar cheese
  • (2 large) eggs
  • (2 large) egg whites
  • (1/2 cup) all-purpose flour
  • (1 tsp.) baking powder

Turkey and Swiss Quiche

A delicious spinach quiche baked over a double crust of Swiss cheese and ham.

    Instructions

  1. 1Preheat oven to 350°F. Spray a 9 in. pie plate with cooking spray and add 1/4 cup Swiss cheese in an even layer.
  2. 2Spray a large nonstick skillet with cooking spray and place over medium heat. Saute ham, onion and pepper 4 minutes, pour over cheese.
  3. 3In a large bowl, whisk together 1/2 cup Swiss cheese, spinach, cottage cheese, fat-free milk, cheddar cheese, eggs and egg whites.
  4. 4In a separate bowl, whisk together flour and baking powder. Add to eggs, whisk to combine.
  5. 5Pour over ham and bake 45 minutes, or until a knife comes out clean. Serve and enjoy!
