Ingredients:
  • (1 cup) pecans
  • (2 tsp.) cinnamon
  • (1/2 tsp.) nutmeg
  • (1/2 tsp.) baking powder
  • Pinch of salt
  • (1/4 cup) canned pumpkin
  • (2 Tbsp.) oil
  • (1/4 cup) sugar-free ginger ale
  • (2) eggs
  • Sugar free syrup or extra sweetener to taste

Flourless Pumpkin Pancakes

Ground pecans take the place of flour in these nutty, spiced pumpkin pancakes.

    Instructions

  1. 1In a food processor, pulse pecans until finely ground. Blend in spices, salt and baking powder. Pour into a medium sized bowl. Mix in pumpkin, oil, ginger ale and eggs until combined.

  2. 2Heat a medium skillet or griddle to medium heat. Pour batter into 4 in. circles in skillet.
  3. 3Cook 2-3 minutes on one side, or until bubbles start forming on the top. Flip, cook another 1-2 minutes. Serve with sugar-free syrup or sweetener.
