  • (1 cup) all-purpose flour
  • (1/2 cup) whole wheat flour
  • (1/4 cup) buckwheat flour
  • (1/4 cup) ground flaxseed
  • (2 Tbsp.) sugar
  • (1 1/2 tsp.) baking powder
  • (1/2 tsp.) ground cinnamon
  • (1/4 tsp.) salt
  • (1 1/2 cups) fat-free milk
  • (3 Tbsp.) butter, melted
  • (2 large) eggs, lightly beaten
  • (1 large) ripe banana, mashed

Buckwheat Banana Waffles

Buckwheat flour and sweet mashed bananas make up the batter for these unique waffles.

    Instructions

  1. 1In a medium bowl, whisk together flours, flaxseed, sugar, baking powder, cinnamon and salt.
  2. 2Preheat waffle iron.
  3. 3In a separate bowl, whisk together milk, butter and eggs. Stir into dry ingredients, add banana and fold to combine.
  4. 4Spray iron with cooking spray. Place about 1/4 cup batter onto iron, close and cook 3-4 minutes. Repeat and serve.
