Multigrain bread triangles topped with layers of herbed broccoli, eggs and two kinds of cheese.

Instructions
1Spray an 11x7 in. baking dish with cooking spray. Arrange bread triangles in an even layer in the bottom of the pan, all in the same direction.
2Place a medium nonstick skillet over medium-high heat. Add butter. When melted, add onion and sugar. Cook 6-7 minutes, stirring every few minutes.
3Add broccoli, basil and oregano and cook another 2-3 minutes, stirring occasionally. Add water and cook another 1-2 minutes, then take off the heat.
4In a medium bowl, whisk together the eggs, egg whites, milk, mustard and pepper, set aside. Top bread with an even layer each of broccoli mixture, Swiss and Parmesan cheese.
5Place remaining bread triangles on top, all in the opposite direction as before. Pour eggs over top and press it into the bread.
6Cover and refrigerate at least 2 hours, up to overnight.
7Preheat oven to 350ºF. Bake 55-60 minutes, or until a knife comes out clean. Let cool 10 minutes and serve.
