Egg and Tomato Sandwich

Ingredients:
  • (1/2 tsp.) extra-virgin olive oil
  • (1 Tbsp.) red onion, finely chopped
  • (2 large) egg whites, beaten
  • Pinch of salt
  • (1/2 tsp.) capers, rinsed and chopped (optional)
  • (1 oz.) smoked salmon
  • (1 slice) tomato
  • (2 slices) whole-wheat bread, toasted

Egg and Tomato Sandwich

Toasted whole wheat bread topped with salty caper egg whites, smoky salmon and fresh tomato slices.

    Instructions

  1. 1Place a small nonstick skillet over medium heat. Add oil. When hot, add red onion and cook 1 minute, stirring. Stir in egg whites, salt and capers until set.

  2. 2Top bottom half of English muffin with egg whites, salmon, tomato and the top of the muffin. Enjoy!
