Ingredients:
  • (1 1/2 cups) whole-wheat flour
  • (1/2 cup) all-purpose flour
  • (1 1/2 tsp.) baking powder
  • (1/4 tsp.) cinnamon
  • (1/4 tsp.) salt
  • (3 large) ripe bananas, mashed
  • (2 large) eggs, lightly beaten
  • (3/4 cup) packed light brown sugar
  • (1/3 cup) milk
  • (3 Tbsp.) unsalted butter, melted and cooled
  • (1 tsp.) vanilla extract
  • (12) dried banana chips, optional

Healthy Banana Muffins

Moist banana muffins with crispy, dried banana chips on top.

    Instructions

  1. 1Preheat oven to 375°F. Place 12 paper liners into a muffin pan.
  2. 2Combine wheat and white flours, baking powder, cinnamon and salt in a large bowl.
  3. 3In a separate large bowl, whisk together mashed bananas, eggs, sugar, milk, butter and vanilla. Fold into flour mixture.
  4. 4Fill each muffin cup 3/4 full and top with a banana chip. Bake 18-20 minutes, or until a toothpick comes out clean. Cool on wire rack and serve.
