Ingredients:
  • (1/2 cup) old-fashioned rolled oats
  • (2 cups) buttermilk
  • (2/3 cup) whole-wheat flour
  • (2/3 cup) all-purpose flour
  • (1/4 cup) toasted wheat germ, or cornmeal
  • (1 1/2 tsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1/4 tsp.) salt
  • (1 tsp.) ground cinnamon
  • (2 large) eggs, lightly beaten
  • (1/4 cup) packed brown sugar
  • (1 Tbsp.) canola oil
  • (2 tsp.) vanilla extract
  • (2 cups) light maple syrup

Delicious homestyle waffles without all the fat and carbs.

    Instructions

  1. 1In a medium bowl, combine oats and buttermilk, let sit for 15 minutes.
  2. 2Preheat waffle iron.
  3. 3In a large bowl, combine flours, wheat germ, baking powder, baking soda, salt and cinnamon.
  4. 4Add eggs, brown sugar, oil and vanilla to oat mixture, stir until combined.
  5. 5Slowly add the wet mixture to the dry, stirring while you add.
  6. 6Spray the waffle iron with cooking spray, then spoon 2/3 cup of batter. Close iron and cook for 4-5 minutes or until golden brown.
  7. 7Serve with maple syrup, enjoy!
