Ingredients:
  • (1 3/4 cups) all-purpose flour
  • (1 tsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1/4 tsp.) salt
  • (1/3 cup) sugar
  • (3/4 cup) low-fat or nonfat buttermilk
  • (1/4 cup) egg substitute
  • (1/4 cup) frozen orange juice concentrate, thawed
  • (2 Tbsp.) vegetable oil
  • (1 Tbsp.) grated orange rind
  • (1/4 cup) orange marmalade spreadable fruit
  • (1 Tbsp.) fresh lemon juice
  • (1 Tbsp.) water

Orange Glazed Muffins

Orange buttermilk muffins with a citrus orange marmalade glaze.

    Instructions

  1. 1Preheat oven to 400°F. Spray a standard muffin pan with cooking spray.
  2. 2In a medium bowl, combine flour, baking powder, baking soda, salt and sugar. Use your hand to make a hole in the center of the mixture; set aside.

  3. 3In a separate bowl, whisk together buttermilk, egg subtitute, orange juice, oil and orange rind. Pour into the hole you created in the flour mixture and stir to combine.

  4. 4Fill each muffin cup 3/4 full and bake 15 minutes, or until a toothpick comes out clean.
  5. 5Meanwhile, place a small saucepan over low heat. Add marmalade, lemon juice and water, stir occasionally until melted. Spoon over muffins, cool and serve.
