Whole Wheat Flaxseed Pancakes

Ingredients:
  • (2 1/2 cups) whole-wheat flour
  • (1 cup) buttermilk powder
  • (5 Tbsp.) dried egg whites
  • (1/4 cup) sugar
  • (1 1/2 Tbsp.) baking powder
  • (2 tsp.) baking soda
  • (1 tsp.) salt
  • (1 cup) flaxseed meal
  • (1 cup) nonfat dry milk
  • (1/2 cup) wheat bran, or oat bran
  • (1 1/2 cups) nonfat milk
  • (1/4 cup) canola oil
  • (1 tsp.) vanilla extract

Whole Wheat Flaxseed Pancakes

These healthy whole wheat pancakes include flaxseed meal and wheat bran.

    Instructions

  1. 1In a large bowl, whisk together flour, buttermilk powder, dried egg whites, sugar, baking powder, baking soda and salt. Add flaxseed meal, dry milk and bran.

  2. 2Set aside 2 cups dry mix in a large bowl and store the rest for another time. Use your hand to make a hole in the center of the dry mixture.
  3. 3Mix together milk, oil and vanilla in a small bowl, then pour into the hole you created. Whisk until combined and set aside 5 minutes.
  4. 4Spray a large nonstick skillet with cooking spray and place it over medium heat. Pour 1/4 cup batter for each pancake onto the griddle, cook 2 minutes.

  5. 5When pancakes start to bubble, flip and cook another 2 minutes. Serve and enjoy!
