Ingredients:
  • (16 oz. can) nonfat refried beans
  • (1/3 cup) low-fat milk
  • (2 6 oz. cans) tuna in water, drained
  • (1) tomato, diced
  • (1) fresh jalapeno pepper, seeded and chopped
  • (1) fresh lime
  • (1/2 cup) shredded lettuce
  • (4) tostada shells
  • (1 cup) salsa
  • (1) ripe avocado, peeled, pitted and sliced

Bean and Tuna Salad Tostadas

Crispy tostada shells topped with warm refried beans, lime tuna salad and creamy avocado slices.

    Instructions

  1. 1Place beans in a small pot and place over medium heat. Stream in milk while stirring, cook until beans are warm.
  2. 2In a medium bowl, combine tuna, tomatoes, jalapenos and lime juice. Top each tostada shell with beans, tuna mixture, lettuce and avocado. Serve and enjoy.
