(3 Tbsp.) mango chutney
(1 tsp.) light mayonnaise
(4 2-oz. slices) diagonally cut French bread
(3 oz.) thinly sliced Muenster cheese, cut into 1/8 in. wide

Spiced Vegetables on Cheese Toast
Crispy French bread topped with Muenster cheese and sweet mango chutney, served with salad greens and spiced sauteed vegetables.

Instructions
1In a large ziplock bag, combine salt, thyme, cinnamon, allspice, pepper and red pepper. Add zucchini, onion, bell pepper, 1 tsp. vinegar, and 1/2 tsp. olive oil.
2Seal the bag and shake. Set aside for 30 minutes, up to overnight (refrigerate if overnight).
3Place a large nonstick skillet over medium-high heat. Add rest of oil. When hot, add spiced vegetables and saute 5 minutes. Reduce heat to low.
4Preheat broiler and place bread on a baking sheet. Broil about 1 minute to toast.
5In a small bowl, stir together chutney and mayo. Top each bread slice with 1 Tbsp. chutney and several slices of cheese. Broil another minute to melt cheese.
6Serve each with 1/2 cup greens and 1/2 cup sauteed vegetables.
