Meatball Subs

Ingredients:
  • (1/4 cup) egg substitute
  • (1/2 cup) soft bread crumbs
  • (1/4 cup) onion, finely chopped
  • (2 cloves) garlic, minced
  • (1/2 tsp.) onion powder
  • (1/2 tsp.) dried oregano
  • (1/2 tsp.) dried basil
  • (1/4 tsp.) pepper
  • Dash of salt
  • (1 1/4 lb.) lean ground turkey
  • (2 cups) garden-style pasta sauce
  • (4) hoagie buns, split
  • (2 Tbsp.) shredded part-skim mozzarella cheese
  • Shredded Parmesan cheese, optional

Meatball Subs

Spiced ground turkey meatballs simmered in garden pasta sauce then sandwiched between hoagie buns with two kinds of cheese.

    Instructions

  1. 1Mix together egg substitute, bread crumbs, onion, garlic, onion, powder, dried oregano, dried basil, pepper and salt in a large bowl. Add ground turkey, mix well.

  2. 2Spray a large skillet with cooking spray and place over medium-high heat. Place another large saucepan next to the stove.
  3. 3Shape into forty 1 in. meatballs, browning them in the pan as you go, then transferring them into the saucepan.
  4. 4When all of the meatballs are in the saucepan, place over High heat. Add pasta sauce. Bring to a boil, then cover and simmer on medium-high heat 10-15 minutes, or until meatballs are cooked through.

  5. 5Top each bun with meatballs and sauce, top with mozzarella and Parmesan. Enjoy!
