Beef Roll Up Packets

Ingredients:
  • (1/4 cup) hoisin sauce
  • (1 Tbsp.) low-sodium soy sauce
  • (1 Tbsp.) rice vinegar
  • (1 Tbsp.) sesame oil
  • (1 lb.) top round, thinly sliced and cut into 12 strips
  • (8) scallions, cut into 3 in. long pieces
  • (1 1/2 cups) shredded carrots
  • (1 cup) instant brown rice
  • (1 lb.) Broccolini
  • Salt and freshly ground black pepper
  • (1 cup) low-sodium chicken broth

Beef Roll Up Packets

Scallions and shredded carrots rolled up in thin slices of top round and steamed in packets with brown rice and Broccolini.

    Instructions

  1. 1Preheat grill to medium-high heat.
  2. 2Cut four pieces of foil (18 in. long each), spray one side with vegetable cooking spray. Lay out on a flat surface.
  3. 3Add hoisin sauce, soy sauce, vinegar and oil to a gallon sized ziplock bag. Add beef, seal bag and shake to coat. Lay beef out on a cutting board.

  4. 4Place a handful each of scallions and carrots at the end of each strip of beef, roll and stick with a toothpick.
  5. 5Place 1/4 cup rice on one half of each piece of foil, top with 3 beef rolls and 1/4 cup broccolini.
  6. 6Sprinkle with salt and pepper, then fold foil over and seal 2 sides. Pour 1/4 cup broth over meat and seal the last side.
  7. 7Grill about 10 minutes with the lid closed, or until packets puff up. Cut open and serve.
