Toasted sourdough bread topped with sauteed mushrooms and peppers, soft goat cheese and thick tomato slices.

Instructions
1Place a large nonstick skillet over medium heat. Add oil. When hot, add onion and bell pepper. Saute 4 minutes, then add mushroom caps and saute another 5 minutes, stirring
occasionally.
2Remove from heat and add vinegar, capers, salt and black pepper, stir to combine.
3Top each bread slice with 2 Tbsp. cheese, 3 tomato slices and 2/3 cup mushroom mixture. Serve and enjoy!
