Sauteed Mushroom and Goat Cheese Sandwich

Ingredients:
  • (1/2 tsp.) olive oil
  • (1 cup) onion, thinly sliced and separated into rings
  • (1 cup) red bell pepper, thinly sliced
  • (6 oz. package) portobello mushroom caps, thinly sliced
  • (2 tsp.) red wine vinegar
  • (1 tsp.) capers
  • (1/4 tsp.) salt
  • (1/8 tsp.) black pepper
  • (3 oz.) goat cheese, softened
  • (3 2-oz. slices) sourdough bread, toasted
  • (9 slices) tomato, 1/8 in. thick

Sauteed Mushroom and Goat Cheese Sandwich

Toasted sourdough bread topped with sauteed mushrooms and peppers, soft goat cheese and thick tomato slices.

    Instructions

  1. 1Place a large nonstick skillet over medium heat. Add oil. When hot, add onion and bell pepper. Saute 4 minutes, then add mushroom caps and saute another 5 minutes, stirring occasionally.

  2. 2Remove from heat and add vinegar, capers, salt and black pepper, stir to combine.
  3. 3Top each bread slice with 2 Tbsp. cheese, 3 tomato slices and 2/3 cup mushroom mixture. Serve and enjoy!
