Lean Pesto Cheeseburgers

Ingredients:
  • (1 lb.) extra-lean ground beef
  • (1/2 tsp.) salt
  • (1/4 tsp.) black pepper
  • (2 Tbsp.) shredded parmesan cheese
  • (4) Portuguese rolls, split and toasted
  • (4) boston lettuce leaves
  • (1/2) tomato, cut into 4 slices
  • (1/4 cup) pesto
  • (1/2) red onion, cut into 4 slices

Lean Pesto Cheeseburgers

Simple and lean ground beef patties topped with Parmesan cheese, lettuce, tomato, pesto and onion on toasted Portuguese rolls.

    Instructions

  1. 1Spray a grill rack with cooking spray and preheat grill to medium-high heat.
  2. 2In a medium bowl, mix together beef, salt and pepper. Form into four equal patties.
  3. 3Grill 4 minutes on each side, divide Parmesan evenly over top of each burger. Cook another 2 minutes, until cheese melts.
  4. 4Assemble burgers on rolls with 1 lettuce leaf, 1 slice tomato, 1 Tbsp. pesto and 1 slice onion each. Enjoy!
