Cola Steak Sandwiches w/Arugula Mayo

Ingredients:
  • (3/4 cup) cola
  • (2 Tbsp.) red wine vinegar
  • (1 tsp.) coarsely ground black pepper
  • (1/2 tsp.) salt
  • (1/2 tsp.) ground chipotle chile pepper
  • (4 cloves) garlic, crushed
  • (1) bay leaf, crushed
  • (1 1 1/2 lb.) flank steak, trimmed
  • (3/4 cup) arugula, minced
  • (1/2 cup) low-fat mayonnaise
  • (6 1/2 in. thick slices) Vidalia onion
  • (6 2-oz.) Kaiser rolls, halved
  • (12 1/4-in. thick slices) tomato

Cola Steak Sandwiches w/Arugula Mayo

Flank steak marinated in cola and spices, grilled and served on toasted rolls with tomato, onion and arugula mayonnaise.

    Instructions

  1. 1In a gallon sized resealable bag, combine cola, vinegar, black pepper, salt, chile pepper, garlic and bay leaf. Add steak, squish it around to coat.

  2. 2Seal the bag and let sit in fridge for 2 hours, turning bag every 1/2 hour. Meanwhile, in a small bowl, combine arugula and mayonnaise, set aside.

  3. 3Spray grill with cooking spray, then preheat to medium-high heat.
  4. 4Remove steak from marinade and place it on the grill for 16 minutes (medium-rare), flipping halway through. Cooking times vary depending on preference.

  5. 5Meanwhile, pour liquid into a microwave-safe bowl. Heat 2 minutes or until boiling, set aside. Remove steak from grill, cover with foil tent for 5 minutes.

  6. 6Place onion on grill, cook 8 minutes, flipping halfway through and occasionally basting with marinade. In the last 2 minutes, place rolls on grill and toast.

  7. 7Cut the steak on a diagonal, then top each half of roll with 2 Tbsp. dressing, steak, tomato and onion. Top with other roll half and serve.
