Crispy Potato Pizza

Ingredients:
  • (5) fingerling potatoes
  • (1 tsp.) olive oil
  • (1 medium) red onion, cut into 1/2-inch-thick slices
  • (13.8 oz. can) refrigerated pizza crust dough
  • (2 Tbsp.) cornmeal
  • (1 cup) shredded part-skim mozzarella cheese
  • (3/4 cup) crumbled goat cheese
  • (1 clove) garlic, minced
  • 1 1/2 tsp.) fresh thyme leaves

Crispy Potato Pizza

A thin and crispy pizza topped with sauteed onion, boiled fingerling potatoes and two kinds of cheese.

    Instructions

  1. 1Position rack to lower third of oven and preheat oven to 450°F. Sprinkle cornmeal over a large baking sheet.
  2. 2Cover potatoes with water in a large saucepan and place over high heat. Boil 10 minutes, or until just tender. Drain, set aside to cool.
  3. 3Place a large nonstick skillet over medium-high heat. Add oil. When hot, add onion and saute 8 minutes, stirring occasionally.
  4. 4Meanwhile, cut each potato crosswise into 1/2 in. slices, set aside. Lightly flour a flat surface and roll pizza dough into a large rectangle.
  5. 5Place on baking sheet, top with an even layer each of mozzarella, potatoes, onion, goat cheese and garlic. Bake 15 minutes or until golden brown.

  6. 6Top with a sprinkle of thyme, cut into 12 slices and serve.
