Tropical Shrimp Tostadas

Ingredients:
  • (4) corn tortillas (6 in. diameter)
  • (3 Tbsp.) olive oil, divided
  • (3/4 lb.) peeled and deveined large shrimp
  • (2 tsp.) fresh lime juice
  • (3/4 tsp.) salt, divided
  • (1) zucchini, cut crosswise into 12 diagonal slices
  • (1/2) fresh pineapple, cored and cut into 8 half-round slices
  • (1/2) red onion, cut into three 1/4 in. slices
  • (1 cup) shredded romaine
  • (1) Hass avocado, cut into 16 slices
  • (4 Tbsp.) fat-free sour cream

Tropical Shrimp Tostadas

Grilled lime shrimp, zucchini and pinapple served on crispy corn tortillas with lettuce and avocado.

    Instructions

  1. 1Preheat oven to 425°F and preheat grill to medium-high. Spray a large baking sheet with cooking spray.
  2. 2Measure out 2 tsp. oil and use a pastry brush to brush both sides of each tortilla with olive oil. Bake on greased baking sheet 11-12 minutes, set aside to cool.

  3. 3In a medium bowl, toss shrimp with 1 Tbsp. olive oil, lime juice and 1/4 tsp. salt. Divide evenly on metal skewers and grill 5-8 minutes, turning once.

  4. 4Use the remaining 4 tsp. olive oil to brush zucchini, pineapple and onions. Top with 1/2 tsp. salt. Grill zucchini and pineapple 8 minutes and onion 10-12 minutes, turning once. Separate onion into rings.

  5. 5Serve each tortilla with 1/4 cup lettuce, 2 slices pineapple, 1/4 onion, 3 slices zucchini, 1/4 shrimp, 4 slices avocado and 1 Tbsp. sour cream. Enjoy!
