Instructions
1Preheat oven to 350°F. Place crepes on baking sheets.
2Place a large frying pan over medium heat. Add oil. When hot, add mushrooms and saute 5-6 minutes. Add spinach, stir and cook another minute. Add salt and pepper as needed.
3Spoon 1/4 of mixture onto each crepe and top with 2 Tbsp. cheese. Fold over.
4Bake 5 minutes, or until cheese is melted and serve.
