Ingredients:
  • (1) egg, hard-boiled and chopped
  • (1 oz.) cheddar cheese, grated
  • (2 Tbsp.) reduced calorie dill dressing (or non-fat mayonnaise mixed with 1/8 tsp. dill weed)
  • (1) pita, cut in half crosswise
  • Leaf lettuce or fresh spinach leaves
  • (2) tomato slices
  • Alfalfa sprouts, optional

Dill Egg Salad Pita Pockets

A halved pita stuffed with hard boiled eggs, cheddar cheese and a refreshing dill mayonnaise.

    Instructions

  1. 1In a small bowl, mix together egg, cheese and dressing (or dill mayo).
  2. 2Line inside of pita with lettuce or spinach and tomato. Stuff with egg salad. Add sprouts if desired. Enjoy!
