Spiced Chicken Lettuce Wraps

Ingredients:
  • (2 tsp.) olive oil
  • (1 lb.) ground chicken breast or turkey breast meat
  • (1 medium) red pepper, chopped
  • (1 tsp.) chili powder
  • (1 tsp.) ground cumin
  • (1/8 tsp.) salt
  • (1 cup) mild salsa
  • (15 to 15 1/2-oz. can) pinto beans, rinsed and drained
  • (12) Boston lettuce leaves
  • (1/2 cup) plain nonfat Greek yogurt

Spiced Chicken Lettuce Wraps

Ground chicken spiced with chili powder and cumin served in crisp lettuce leaves with tangy Greek yogurt.

    Instructions

  1. 1Place a large, nonstick skillet over medium heat. Add olive oil.
  2. 2When hot, add chicken, red pepper, chili powder, ground cumin and salt. Cook about 8 minutes, stirring every few minutes. Add salsa and beans, cook another 5 minutes.

  3. 3Fill each lettuce leaf with chicken and a spoonful of yogurt. Fold and enjoy!
