Cold Avocado Soup

Ingredients:
  • (2 Tbsp.) fresh cilantro, chopped
  • (1 tsp.) grated lemon rind
  • (1 tsp.) red onion, finely chopped
  • (1 tsp.) extravirgin olive oil
  • (8 oz.) medium shrimp, peeled and deveined, steamed and coarsely chopped
  • (2 cups) fat-free, less-sodium chicken broth
  • (1 3/4 cups) avocado, chopped
  • (1 cup) water
  • (1 cup) canned navy beans, rinsed and drained
  • (1/2 cup) fat-free plain yogurt
  • (1 1/2 Tbsp.) fresh lemon juice
  • (1/4 tsp.) salt
  • (1/4 tsp.) black pepper
  • (1/4 tsp.) hot pepper sauce
  • (1 small) jalapeƱo pepper, seeded and chopped
  • (1/4 cup) crumbled queso fresco cheese

Cold Avocado Soup

Pureed avocado soup served with a cilantro, red onion and shrimp topping and crumbled queso fresco.

    Instructions

  1. 1In a small bowl, toss together cilantro, lemon rind, red onion, olive oil and shrimp; set aside.
  2. 2Place broth, avocado, water, navy beans, yogurt, lemon juice, salt, pepper, hot sauce and jalapeno in a blender, puree until smooth. Top each serving of soup with 1/4 cup topping and 1 Tbsp. cheese, enjoy!
