(4 cups) organic vegetable broth (such as Swanson Certified Organic)
(28 oz. can) diced tomatoes, undrained
(1 sprig) thyme
(1/4 tsp.) salt
(1/4 tsp.) freshly ground black pepper
(6 slices) French bread, cut diagonally (about 1 in. thick)

Chunky Tomato Soup w/Cheese Toast
This chunky tomato soup with cheese toast is healthy but still comforting with flavors of tomato, onion, garlic and thyme.

Instructions
1Place a large Dutch oven over medium-high heat, add oil. When hot, add onion and saute for 3 minutes. Add fennel and saute another 3 minutes, then garlic and saute another 5 minutes.
2Add vegetable broth, tomatoes and thyme, bring to a boil. Once it boils, reduce heat and partially cover. Simmer for 35 minutes, then remove from heat. Let cool 5 minutes.
3Preheat broiler. Arrange bread on a baking sheet, top each slice with 1 Tbsp. cheese. Broil about 2 minutes, until cheese is melted.
4Remove the thyme, then put 1/2 of the mixture into a blender. Blend until desired consistency, making sure to remove the center part of the lid beforehand (cover with a towel to avoid a mess!)
5Transfer to large bowl and repeat with other half of mixture. Add salt and pepper, serve.
