Ingredients:
  • (3) limes
  • (1 cup) tomato, seeded and chopped
  • (1 cup) avocado, peeled and diced
  • (1/2 cup) fresh cilantro, chopped
  • (3/4 tsp.) salt
  • (1/4 tsp.) black pepper
  • (3 cloves) garlic, minced
  • (1 lb.) medium shrimp, cooked and peeled
  • (12 6-in.) corn tortillas, warmed

Fresh Shrimp Tacos

Tender shrimp tossed with a cilantro-lime tomato and avocado marinade then wrapped in warm corn tortillas.

    Instructions

  1. 1Grate 1 Tbsp. lime zest into a large glass bowl. Squeeze in 1/4 cup lime juice , tomatoes, avocado, cilantro, salt, pepper, garlic and shrimp. Toss, cover and refrigerate 15 minutes, stirring every few minutes.

  2. 2Fill each warm tortilla with 1/2 cup shrimp, roll and serve.
