Ingredients:
  • (1/4 cup) olive oil
  • (1 cup) onions, chopped
  • (1 cup) red or green bell pepper, chopped
  • (3 cups) cooked black beans
  • (1 cup) tomato sauce
  • (2 Tbsp.) red wine vinegar
  • (1 tsp.) maple syrup
  • (1/4 tsp.) cumin
  • (1/4 tsp.) smoked paprika
  • (1/4 tsp.) salt

    Instructions

  1. 1Place a large skillet over medium heat. Add oil. When hot, add onions and pepper, saute 5 minutes or until tender, stirring occasionally.
  2. 2Add beans, tomato sauce, vinegar, maple syrup, cumin, paprika and salt. Simmer 15 minutes, stirring occasionally. Serve on whole-grain rolls.*
