Grilled Zucchini Sandwich w/Cilantro Mayo
Grilled zucchini layered with mozzarella cheese, roasted red peppers and cilantro mayonnaise on toasted whole grain bread.

Instructions
1Preheat outdoor grill or indoor griddle to medium-high heat.
2In a small bowl, combine mayo and cilantro. Pour olive oil into a small bowl. Use a pastry brush to coat one side of each zuchinni slice, then sprinkle with garlic salt. Place on grill for 5 minutes.
3Meanwhile, brush one side of each slice of bread with oil. Flip zuchinni, brush with oil, top with cheese. Grill
another 2 minutes or until cheese is melted.
4Place bread on grill, toast one minute on each side. Slather each grilled slice of bread with mayo, two zuchinni slices, onions and red peppers. Top with another slice of bread, cut and serve.
