Cola Steak Sandwiches w/Arugula Mayo
Ingredients:
- (3/4 cup) cola
- (2 Tbsp.) red wine vinegar
- (1 tsp.) coarsely ground black pepper
- (1/2 tsp.) salt
- (1/2 tsp.) ground chipotle chile pepper
- (4 cloves) garlic, crushed
- (1) bay leaf, crushed
- (1 1 1/2 lb.) flank steak, trimmed
- (3/4 cup) arugula, minced
- (1/2 cup) low-fat mayonnaise
- (6 1/2 in. thick slices) Vidalia onion
- (6 2-oz.) Kaiser rolls, halved
- (12 1/4-in. thick slices) tomato

Instructions
- 1In a gallon sized resealable bag, combine cola, vinegar, black pepper, salt, chile pepper, garlic and bay leaf. Add steak, squish it around to coat.
- 2Seal the bag and let sit in fridge for 2 hours, turning bag every 1/2 hour. Meanwhile, in a small bowl, combine arugula and mayonnaise, set aside.
- 3Spray grill with cooking spray, then preheat to medium-high heat.
- 4Remove steak from marinade and place it on the grill for 16 minutes (medium-rare), flipping halway through. Cooking times vary depending on preference.
- 5Meanwhile, pour liquid into a microwave-safe bowl. Heat 2 minutes or until boiling, set aside. Remove steak from grill, cover with foil tent for 5 minutes.
- 6Place onion on grill, cook 8 minutes, flipping halfway through and occasionally basting with marinade. In the last 2 minutes, place rolls on grill and toast.
- 7Cut the steak on a diagonal, then top each half of roll with 2 Tbsp. dressing, steak, tomato and onion. Top with other roll half and serve.
