Cubans on Toast
Ingredients:
- (1/4 tsp.) salt
- (1/4 tsp.) fresh-ground pepper
- (1/4 tsp.) ground cinnamon
- (1/8 tsp.) freshly grated nutmeg
- (1/8 tsp.) ground cloves
- (3 cloves) garlic, finely chopped
- (3 Tbsp.) extra-hot Dijon mustard
- (2 Tbsp.) mayonnaise
- (11 oz.) pork tenderloin
- (1 Tbsp.) olive oil
- (16 slices) round, soft French or Italian bread, lightly toasted
- (4 oz.) Swiss cheese, thinly sliced
- (4 slices) dill pickle, sandwich style, cut in half
- (4 oz.) Black Forest ham, thinly sliced

Instructions
- 1In a small bowl, combine salt, pepper, cinnamon, nutmeg, cloves, garlic and mustard. Place 1 1/2 Tbsp. in a separate bowl, add mayonnaise and stir to combine, set aside.
- 2In a small roasting pan, cover tenderloin with remaining mustard. Cover and refrigerate 25 minutes.
- 3Preheat oven to 450°F. Let tenderloin sit at room temperature 10 minutes, then bake 20-25 minutes, turning after 10 minutes. Set aside to rest 15 minutes, then thinly slice.
- 4Place 1 Tbsp. olive oil in a small bowl, use a pastry brush to brush the baking pan and a sheet of foil with the oil.
- 5Top each piece of toast with 1/2 tsp. mayonnaise mixture. Top half of toasts evenly with pork, Swiss, pickles and ham. Sandwich together, place on pan and cover with foil, oil
side down.
- 6Bake 10 minutes to melt the cheese and serve.
